- Varieties: Very old vines of Carignan (60%) and black Grenache (10%), associated to the Syrah (30%).
- Terroir: Very stony limestone for Carignan and Syrah, sandstone for the Grenache. Yields inferior to 30 hl/ha.
- Harvest: Manual
- Vinification: In red traditional with maceration of 20 days for Syrah and Grenache and maceration of enter grappes for a part of Carignan. Ageing in vats during one year and half with racking.
- Tasting: Intense nose of ripe red fruits, pepper and violet. The attack is frank and powerful. The tannins are structured.
- Wine and food pairings: To savor with cold meats, a cassoulet or a duck confit.
